Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for about 2 minutes until onion is translucent.
- Add ground turkey to the skillet, breaking it apart. Cook for 5-6 minutes until browned and no longer pink.
- Stir in drained diced tomatoes, dried Italian herbs, salt, and black pepper. Simmer for 3-4 minutes.
- Layer half of the zucchini at the bottom of the prepared baking dish, followed by half the turkey mixture and half the cheese. Repeat the layers.
- Bake uncovered in the preheated oven for 30-35 minutes until cheese is bubbly and golden brown.
- Remove from oven and let cool for 5 minutes before slicing into portions.
