  • 1 lb Ground Turkey Lean protein
  • 2 cups Zucchini Sliced
  • 2 cups Shredded Mozzarella Cheese Can substitute with cheddar or Italian blends
  • 1 medium Chopped Onion Can replace with shallots or omit
  • 2 cloves Garlic Minced; or use garlic powder for a milder flavor
  • 1 can Diced Tomatoes Drained; can use fresh tomatoes as alternative
  • 1 tbsp Dried Italian Herbs Fresh herbs can be substituted
  • 1 tsp Salt
  • 1/2 tsp Black Pepper Adjust to taste
  • 2 tbsp Olive Oil For sautéing

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for about 2 minutes until onion is translucent.
  3. Add ground turkey to the skillet, breaking it apart. Cook for 5-6 minutes until browned and no longer pink.
  4. Stir in drained diced tomatoes, dried Italian herbs, salt, and black pepper. Simmer for 3-4 minutes.
  5. Layer half of the zucchini at the bottom of the prepared baking dish, followed by half the turkey mixture and half the cheese. Repeat the layers.
  6. Bake uncovered in the preheated oven for 30-35 minutes until cheese is bubbly and golden brown.
  7. Remove from oven and let cool for 5 minutes before slicing into portions.
