  2. In a medium saucepan, combine brown sugar, water or apple juice, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Stir over medium heat until thickened, about 3-5 minutes. Add sliced apples and cook for 5 minutes.
  3. Pour the warm apple mixture into the prepared baking pan, spreading evenly.
  4. In a mixing bowl, whisk together flour, white sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
  5. Spread the biscuit batter evenly over the apple filling and sprinkle with ground cinnamon.
  6. Bake for 38-40 minutes until the topping is golden brown and a toothpick comes out clean.
  7. Allow the cobbler to cool for 15 minutes before serving warm, ideally with vanilla ice cream.
