Step-by-Step Instructions
  1. Cook the Pasta: Boil salted water, add tri-color rotini, cook until al dente (8-10 mins), drain, and rinse with cold water.
  2. Prepare the Wontons: Cook crispy wontons during the last 2 minutes of pasta cooking or boil separately for 2 minutes. Drain and cool.
  3. Chop the Vegetables: Wash and chop sugar snap peas, cucumber, green onions, red onion, and mini tri-color peppers into bite-sized pieces.
  4. Combine Ingredients: In a mixing bowl, combine cooled rotini, wontons, chopped vegetables, and thawed edamame. Toss gently.
  5. Dress the Salad: Drizzle with poppy seed dressing, toss again, cover, and refrigerate for at least 1 hour.
