- Cut the white fish fillets into bite-sized chunks and set aside. Mince the garlic and grate the ginger.
- In a large skillet, heat oil over medium heat. Once shimmering, add red curry paste, garlic, and ginger. Sauté for 2 minutes.
- Add the fish chunks, cooking for 4-5 minutes until they begin to flake and turn opaque.
- Pour in the coconut milk, lime zest and juice, and season with salt and pepper. Optional: stir in fish sauce. Simmer for 10-15 minutes.
- Rinse the jasmine rice under cold water. Boil water in a separate saucepan, add rice, cover, and simmer for 15-20 minutes.
- Fluff the jasmine rice and serve on plates, spooning the coconut lime fish curry over the rice. Garnish with cilantro and lime zest.
