- In a blender, combine one cup of coconut milk, three-quarters of a cup of freshly squeezed lemon juice, and half a cup of lavender syrup. Blend on high speed for about 30 seconds until smooth.
- Incorporate a tablespoon of honey or agave nectar into the blender. Blend briefly for another 15 seconds.
- Pour in about one cup of cold water to achieve desired consistency. Blend again on low speed for 20 seconds.
- Place a fine mesh strainer over a large bowl and pour the mixture through it. Use a spatula to press down to extract every bit of liquid.
- Fill tall glasses with ice cubes. Pour the strained Coconut Lavender Lemonade Mocktail over the ice.
- Garnish each glass with thin lemon slices and sprigs of fresh lavender. Serve immediately.
