Method
 

Baking Instructions
  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, salt, baking soda, and baking powder.
  3. In a large bowl, cream together softened butter, light brown sugar, and white sugar until light and fluffy.
  4. Add egg and vanilla extract to the creamed mixture, beating until just combined.
  5. Gradually fold the dry mixture into the wet ingredients, then fold in the shredded coconut.
  6. Scoop the dough into balls, rolling in extra shredded coconut, and place on baking sheets.
  7. Chill the cookie dough balls in the refrigerator for 30 minutes.
  8. Bake in preheated oven for 13–15 minutes, until edges are golden.
  9. Allow to cool on baking sheets for 15 minutes, then transfer to wire racks.
