Baking Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, salt, baking soda, and baking powder.
- In a large bowl, cream together softened butter, light brown sugar, and white sugar until light and fluffy.
- Add egg and vanilla extract to the creamed mixture, beating until just combined.
- Gradually fold the dry mixture into the wet ingredients, then fold in the shredded coconut.
- Scoop the dough into balls, rolling in extra shredded coconut, and place on baking sheets.
- Chill the cookie dough balls in the refrigerator for 30 minutes.
- Bake in preheated oven for 13–15 minutes, until edges are golden.
- Allow to cool on baking sheets for 15 minutes, then transfer to wire racks.
