  • 4 cups cooked pasta rotini or penne works well
  • 1 cup cooked chicken breast diced
  • 6 strips cooked bacon crumbled
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • 2 cups chopped romaine lettuce
  • 1 cup shredded cheddar cheese
  • 1 cup cubed toasted bread or croutons
For the Dressing
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • salt to taste
  • black pepper to taste
  • chopped fresh parsley or chives for garnish

Method
 

Preparation
  1. In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar. Season with salt and pepper to taste. Set aside.
  2. In a large mixing bowl, combine cooked pasta, diced chicken breast, crumbled bacon, halved cherry tomatoes, sliced red onion, chopped romaine lettuce, and shredded cheddar cheese. Stir gently to combine.
  3. Pour the prepared dressing over the salad mixture and gently toss until everything is evenly coated with dressing.
  4. Just before serving, gently fold in cubed toasted bread or croutons to maintain crunch.
  5. Garnish with chopped parsley or chives and serve chilled or at room temperature.
