Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together applesauce, Greek yogurt, egg, honey or maple syrup, vanilla extract, and almond milk.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fill each muffin liner about two-thirds full with batter.
  6. Bake for 15–18 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool in the tin for 5 minutes before transferring to a wire rack.
