  • 1 cup Shredded Cheese non-dairy cheese for dairy-free option
  • 3 cups Frozen Diced Potatoes frozen hashbrowns can also work

For Garnish
  • 1/4 cup Chopped Cilantro optional
  • 1 medium Avocado sliced
  • 1 cup Chunky Salsa to taste

Method
 

Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and grease a 9x13 dish.
  2. Cook chorizo in a non-stick pan over medium-high heat for 5-7 minutes until browned and crispy. Drain excess grease.
  3. Sauté red bell pepper, poblano pepper, and onion in the same pan for about 3-4 minutes until softened.
  4. In a mixing bowl, whisk together eggs, milk, salt, and black pepper until light and frothy. Stir in diced green chiles.
  5. Layer frozen potatoes, chorizo, and sautéed veggies in the baking dish, then pour egg mixture evenly over the top. Add cheese as desired.
  6. Bake for 40-45 minutes until eggs are set and cheese is golden brown.
  7. Let cool for 5 minutes, garnish with cilantro, and serve with avocado and salsa.
