Preparation
- Preheat your oven to 350°F (175°C) and lightly coat a 9x13 baking dish with cooking spray.
- In a shallow bowl, mix together dried breadcrumbs, panko, grated Parmesan cheese, kosher salt, and black pepper. Stir in olive oil.
- Slice each chicken breast horizontally into four thin pieces and pound them to about 1/4-inch thickness. Season with remaining salt and pepper.
- Place slices of ham and gruyere cheese on chicken pieces, roll them tightly, and coat in the breadcrumb mixture.
- Place the roll-ups seam-side down in the prepared baking dish and sprinkle any leftover breadcrumb mixture on top.
- Bake for 20-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Allow to rest for 5 minutes before slicing and serving.
