Ingredients
  

For the Coating
  • 1 can Cooking Spray Prevents sticking during baking.
  • 1 cup Dried Breadcrumbs Or substitute with crushed crackers for gluten-free.
  • 1 cup Panko Breadcrumbs For extra crispiness.
  • 1/2 cup Grated Parmesan Cheese Or use nutritional yeast for dairy-free.
  • 3/4 teaspoon Kosher Salt Essential for seasoning.
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Olive Oil Moistens breadcrumbs.
For the Filling
  • 4 pieces Boneless, Skinless Chicken Breasts Pound thin for even cooking.
  • 8 slices Deli Ham Can substitute with turkey ham or prosciutto.
  • 1 cup Gruyere Cheese Or substitute with Swiss cheese.
  • 1/4 cup Chopped Parsley Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly coat a 9x13 baking dish with cooking spray.
  2. In a shallow bowl, mix together dried breadcrumbs, panko, grated Parmesan cheese, kosher salt, and black pepper. Stir in olive oil.
  3. Slice each chicken breast horizontally into four thin pieces and pound them to about 1/4-inch thickness. Season with remaining salt and pepper.
  4. Place slices of ham and gruyere cheese on chicken pieces, roll them tightly, and coat in the breadcrumb mixture.
  5. Place the roll-ups seam-side down in the prepared baking dish and sprinkle any leftover breadcrumb mixture on top.
  6. Bake for 20-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
  7. Allow to rest for 5 minutes before slicing and serving.
