Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Wash and cube the russet potatoes into bite-sized pieces. Toss with olive oil and spices until evenly coated. Spread on a baking sheet in a single layer.
  2. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  3. While potatoes roast, heat a skillet over medium heat. Cook ground beef until browned, about 5-7 minutes. Drain excess grease, add taco seasoning and water, and simmer for another 5 minutes.
  4. Transfer roasted potatoes to a casserole dish, spoon meat mixture over, and sprinkle cheese on top.
  5. Bake for another 5 minutes until cheese is bubbly and melted.
  6. Garnish with sour cream, green onions, or cilantro and serve hot.
