  • 8 oz Cream Cheese Neufchâtel can be used for lower fat
  • 1 cup Mozzarella Cheese Provolone or Monterey Jack can be alternatives
  • 1/2 cup Parmesan Cheese Opt for freshly grated
For Seasoning & Searing
  • 1 tbsp Olive Oil Used for sautéing and searing
  • 1 tbsp Italian Herbs Dried herbs work well too
  • 1 tsp Salt
  • 1 tsp Black Pepper
For Assembly
  • 1 pkg Toothpicks/Kitchen Twine For securing the roll-ups

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Pound the chicken to a uniform thickness of about 1/4 inch.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute, then add spinach and cook until wilted.
  3. Allow filling to cool slightly, then combine with cream cheese, mozzarella, Parmesan, herbs, salt, and pepper until smooth.
  4. Spread the cheesy spinach mixture over each flattened chicken breast, roll them tightly, and secure with toothpicks.
  5. Sear the roll-ups seam-side down in medium-high heat until golden-brown, about 2-3 minutes.
  6. Transfer to the oven and bake for 20-25 minutes until internal temperature reaches 165°F (74°C). Allow rest for 5 minutes before slicing.
