  • 3 pounds Yukon Gold Potatoes washed and thinly sliced
For the Cheese Sauce
  • 2 cups Mozzarella shredded
  • 1 cup Sharp Cheddar shredded
  • 1 cup Cream or half-and-half
  • 1 cup Milk whole or skim
  • 4 tablespoons Butter for roux
  • 0.5 cup Flour or gluten-free flour
For Seasoning
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Black Pepper
For the Garnish
  • to taste Parsley or Dill chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and butter a 9x13-inch baking dish.
  2. Wash and slice the Yukon Gold potatoes into 1/8 inch thick slices, layering them in the baking dish.
  3. In a medium saucepan, melt butter, whisk in flour to form a roux, and cook until golden and smooth (about 2 minutes).
  4. Pour in milk and cream gradually, whisking to prevent lumps and cook until the sauce thickens (about 10 minutes).
  5. Stir in mozzarella and sharp cheddar cheese until fully melted and the sauce is creamy.
  6. Pour half of the cheese sauce over the layered potatoes, cover with aluminum foil, and bake for 30 minutes.
  7. Remove foil, pour the remaining cheese sauce over the potatoes, and bake uncovered for an additional hour.
  8. Let cool slightly, garnish with parsley or dill, and serve warm.
