- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together 4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of salt until well mixed.
- Gently fold in 1 cup of shredded cheddar cheese, 1/4 cup of finely chopped fresh chives, 1 tablespoon of fresh thyme, 1 tablespoon of fresh rosemary, and 1 tablespoon of fresh sage.
- Pour in 1 1/2 cups of buttermilk and stir gently until just combined.
- Turn the dough onto a floured surface and lightly knead it for about 30 seconds. Form it into a round ball, then flatten it into a 7-inch circle.
- Transfer the formed dough onto a floured baking sheet. Score a cross on the top about 1/2 inch deep.
- Bake for 15 minutes at 425°F (220°C), then reduce the temperature to 375°F (190°C) and continue baking for an additional 30-35 minutes.
- Remove the bread from the oven and wrap it in a clean tea towel. Let it cool for about 10-15 minutes.
