  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Gradually add to the wet ingredients until just combined.
  4. Shape the dough into 1-inch balls, flatten slightly, place a caramel candy in the center, and fold the dough around it.
  5. Mix together brown sugar and cinnamon. Roll each cookie dough ball in this mixture until coated.
  6. Place the cookie balls on the baking sheet, spaced about 2 inches apart. Bake for 10-12 minutes or until edges are golden.
  7. Remove cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
