- Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper or grease it.
- Butterfly each chicken breast or cut a pocket into them to help with even cooking.
- Microwave broccoli florets for about 1 minute until slightly soft.
- In a bowl, mix softened broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, and a dash of salt until well combined.
- Spread the filling onto each chicken breast and roll tightly, securing with toothpicks.
- Dip each rollup in beaten eggs, then roll in breadcrumbs to coat.
- Lightly spray the rollups with cooking spray and place them seam-side down on the baking sheet.
- Bake for about 25 minutes until golden brown and juices run clear, checking that the internal temperature reaches 165°F.
- Five minutes before they are done, sprinkle more cheddar cheese on top.
- Allow to rest for about 5 minutes before serving.
