Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper or grease it.
  2. Butterfly each chicken breast or cut a pocket into them to help with even cooking.
  3. Microwave broccoli florets for about 1 minute until slightly soft.
  4. In a bowl, mix softened broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, and a dash of salt until well combined.
  5. Spread the filling onto each chicken breast and roll tightly, securing with toothpicks.
  6. Dip each rollup in beaten eggs, then roll in breadcrumbs to coat.
  7. Lightly spray the rollups with cooking spray and place them seam-side down on the baking sheet.
  8. Bake for about 25 minutes until golden brown and juices run clear, checking that the internal temperature reaches 165°F.
  9. Five minutes before they are done, sprinkle more cheddar cheese on top.
  10. Allow to rest for about 5 minutes before serving.
