Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of blueberries, 1 tablespoon of lemon juice, and 1 tablespoon of honey. Heat over medium-low for 5–6 minutes while gently mashing the blueberries until a jam-like consistency is reached. Stir in 1 tablespoon of chia seeds and let cool completely.
  2. In a mixing bowl, whisk together 2 cups of Greek yogurt, 1 tablespoon of honey, and 1 teaspoon of vanilla extract until smooth and creamy. Adjust sweetness if desired.
  3. Spoon 1 tablespoon of the yogurt mixture into each cavity of a mini silicone muffin tray, filling halfway. Add ½ teaspoon of blueberry compote on top and swirl gently with a toothpick.
  4. Place the tray flat in the freezer and let freeze for at least 2 hours, or until solid.
  5. Once frozen, pop the bites out of the tray and transfer to an airtight container for storage in the freezer.
