Step-by-Step Instructions
- In a medium saucepan, combine 1 cup of blueberries, 1 tablespoon of lemon juice, and 1 tablespoon of honey. Heat over medium-low for 5–6 minutes while gently mashing the blueberries until a jam-like consistency is reached. Stir in 1 tablespoon of chia seeds and let cool completely.
- In a mixing bowl, whisk together 2 cups of Greek yogurt, 1 tablespoon of honey, and 1 teaspoon of vanilla extract until smooth and creamy. Adjust sweetness if desired.
- Spoon 1 tablespoon of the yogurt mixture into each cavity of a mini silicone muffin tray, filling halfway. Add ½ teaspoon of blueberry compote on top and swirl gently with a toothpick.
- Place the tray flat in the freezer and let freeze for at least 2 hours, or until solid.
- Once frozen, pop the bites out of the tray and transfer to an airtight container for storage in the freezer.

Notes
Let the blueberry compote cool completely before combining with yogurt for best texture. Adjust sweetness according to preference and ensure even freezing for easy removal.
