Step-by-Step Instructions for BBQ Chicken Quesadillas
  1. Preheat a non-stick skillet over medium heat for 2-3 minutes.
  2. Warm BBQ sauce in a small saucepan over low heat for 2 minutes, then add shredded chicken and stir.
  3. On one tortilla, layer Monterey Jack cheese, BBQ chicken mixture, red onion, and cilantro, then top with another tortilla.
  4. Cook the quesadilla in the skillet for 3-4 minutes until golden brown on the bottom.
  5. Flip the quesadilla and cook the other side for another 3-4 minutes until golden and crispy.
  6. Remove from skillet, let sit for a minute, then slice into wedges and serve warm.
