Step-by-Step Instructions for Bang Bang Fried Rice
- In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside.
- Heat oil in a skillet over medium-high heat. Add diced chicken and sauté for 5-6 minutes until browned. Transfer chicken to a plate.
- In the same skillet, lower the heat and pour in the beaten eggs. Scramble for about 2 minutes until just set. Remove and set aside.
- Add more oil if needed, then sauté diced carrots and minced garlic for 2-3 minutes. Add green peas and cook for another minute.
- Increase heat to high and add the cold rice. Stir-fry for 3-4 minutes until slightly crispy.
- Return chicken and eggs to the skillet, mix with rice and vegetables. Stir in soy sauce and cook for about 2 minutes.
