  • 3 cloves Garlic Minced.
  • 4 stalks Green Onions Sliced.
For the Seasoning
  • 2 tablespoons Soy Sauce Swap with tamari for gluten-free.
For the Bang Bang Sauce
  • ¼ cup Mayonnaise
  • 2 tablespoons Sweet Chili Sauce
  • 1 tablespoon Sriracha
  • 1 tablespoon Rice Vinegar
For Cooking
  • 2 tablespoons Oil Neutral oil like canola or vegetable.

Method
 

Step-by-Step Instructions for Bang Bang Fried Rice
  1. In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside.
  2. Heat oil in a skillet over medium-high heat. Add diced chicken and sauté for 5-6 minutes until browned. Transfer chicken to a plate.
  3. In the same skillet, lower the heat and pour in the beaten eggs. Scramble for about 2 minutes until just set. Remove and set aside.
  4. Add more oil if needed, then sauté diced carrots and minced garlic for 2-3 minutes. Add green peas and cook for another minute.
  5. Increase heat to high and add the cold rice. Stir-fry for 3-4 minutes until slightly crispy.
  6. Return chicken and eggs to the skillet, mix with rice and vegetables. Stir in soy sauce and cook for about 2 minutes.
  7. Drizzle the Bang Bang sauce over the mixture and stir to coat. Heat for another 1-2 minutes until warmed through.
  8. Garnish with sliced green onions and serve hot. Enjoy!
