Step-by-Step Instructions
  1. Prepare the Bang Bang Sauce by whisking together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a bowl.
  2. Sauté the chicken in a large skillet with oil for 5-6 minutes until golden brown.
  3. Scramble the eggs in the same skillet for about 2 minutes, then remove them.
  4. Cook the carrots and garlic in the skillet for 2-3 minutes until fragrant.
  5. Stir-fry the cold rice in the skillet for 3-4 minutes until heated through and crispy.
  6. Combine the sautéed chicken and scrambled eggs with the rice and add soy sauce.
