Ingredients
  

For the Tart Base
  • 4 large Eggs Room temperature for better mixing
  • 1 large Beaten Egg (for wash) Enhances color and shine
  • 1 sheet Puff Pastry Dough Thawed before using
  • 1 tsp Kosher Salt Enhances flavor
For the Filling
  • 8 oz Boursin Cheese Can substitute with goat cheese
  • 2 Tbsp Green Onion Chopped finely
  • 4 oz Prosciutto Can replace with bacon or salmon
  • 1 Tbsp Everything But The Bagel Seasoning Optional
For the Salad
  • 4 cups Arugula Adds freshness
  • 2 Tbsp Olive Oil For dressing
  • 1 Tbsp Fresh Lemon Juice Brightens flavor
  • 2 Tbsp Parmigiano Cheese Shaved for topping

Method
 

Steps
  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Roll out thawed puff pastry, trim edges, score a border about 1 inch from the edge, and poke holes in the center.
  3. Whisk together the beaten egg with a splash of water and brush over the pastry edges. Sprinkle with Everything But The Bagel Seasoning.
  4. Pre-bake the pastry for about 10 minutes until golden brown.
  5. Spread Boursin cheese over the pre-baked pastry and crack the eggs on top. Season with kosher salt.
  6. Bake for an additional 12-14 minutes until egg whites are set but slightly jiggly.
  7. Scatter torn prosciutto and chopped green onions on the tart and allow residual heat to crisp the prosciutto.
  8. In a bowl, drizzle arugula with olive oil, fresh lemon juice, and a pinch of salt. Toss to combine.
  9. Cut the tart into slices, serve with the arugula salad on top, and sprinkle with shaved Parmigiano cheese.

Notes

Tart is best served warm fresh out of the oven. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
