  • 2 cups Cherry or Grape Tomatoes can substitute with regular tomatoes
  • 1 medium Red Bell Pepper any color bell pepper can be used
  • 1 medium Red Onion shallots can substitute for a sweeter profile
  • 2 cloves Garlic fresh garlic is recommended
  • 2 cups Baby Spinach can substitute with kale or Swiss chard
Feta Mixture
  • 8 oz Feta Cheese can substitute with goat cheese
  • 1 tbsp Olive Oil other oils like avocado oil can also be suitable
  • 1 tsp Dried Oregano fresh oregano can be used if available
  • 1 tsp Sea Salt adjust to taste
  • 1 tsp Dried Thyme Italian seasoning can be an alternative
  • 1/2 tsp Black Pepper use white pepper for a less visible option
  • 1/4 tsp Red Pepper Flakes omit for a milder dish
Eggs
  • 4 large Eggs can substitute with egg whites for a lower-calorie version
Optional Topping
  • 1/4 cup Chopped Fresh Herbs or Chives for garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and prepare your baking dish or ramekins.
  2. Prepare the vegetables by dividing the tomatoes, bell pepper, onion, and garlic among the ramekins or combine in a baking dish with feta in the center. Drizzle with olive oil.
  3. Mix dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes in a bowl. Sprinkle this mix over the veggies and feta.
  4. Bake for 25 minutes until veggies are softened and feta is melting. Ensure everything is bubbling.
  5. Stir in baby spinach and mix until wilted down.
  6. Create wells in the mixture and crack an egg into each well, making sure the yolks are on top.
  7. Bake for an additional 10 minutes until the egg whites are set.
  8. Garnish with fresh herbs or chives and serve warm.
