- Preheat your oven to 400°F (200°C) and prepare your baking dish or ramekins.
- Prepare the vegetables by dividing the tomatoes, bell pepper, onion, and garlic among the ramekins or combine in a baking dish with feta in the center. Drizzle with olive oil.
- Mix dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes in a bowl. Sprinkle this mix over the veggies and feta.
- Bake for 25 minutes until veggies are softened and feta is melting. Ensure everything is bubbling.
- Stir in baby spinach and mix until wilted down.
- Create wells in the mixture and crack an egg into each well, making sure the yolks are on top.
- Bake for an additional 10 minutes until the egg whites are set.
- Garnish with fresh herbs or chives and serve warm.
