Method
 

Steps to Prepare
  1. Preheat your oven to 375°F (190°C). Prepare muffin tin with liners or grease.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  3. In another bowl, mix milk, oil, egg, and vanilla until smooth.
  4. Gently fold wet ingredients into dry ingredients without overmixing.
  5. Mix apple butter with brown sugar and cinnamon in a small bowl.
  6. Combine flour, brown sugar, cold butter, cinnamon, and salt for streusel topping until crumbly.
  7. Spoon muffin batter into tin, add apple butter mixture, and swirl with a toothpick.
  8. Sprinkle the streusel topping onto each muffin and bake for 20-22 minutes.
  9. Allow muffins to cool in tin for 5 minutes before transferring to a wire rack.
