  • ¼ cup honey or brown sugar; maple syrup can also be used
Salad
  • 6 cups baby spinach can substitute with mixed greens or arugula
  • 2 cups strawberries sliced; can substitute with peaches or kiwi
  • 1 cup blueberries can substitute with raspberries or blackberries
  • ½ cup feta cheese can substitute with goat cheese or ricotta
  • 1 cup toasted pecans can substitute with walnuts or almonds

Method
 

Preparation
  1. In a small saucepan, combine balsamic vinegar and honey over medium heat. Stir gently and bring to a gentle boil. Simmer for about 10 minutes until reduced by half and slightly thickened.
  2. In a large bowl, combine baby spinach, sliced strawberries, blueberries, and crumbled feta cheese. Gently toss until well combined.
  3. Divide the salad mixture into bowls and top with toasted pecans. Drizzle the cooled balsamic glaze over the salad before serving.
